CAVINO’s founding winery is located in Aigio, surrounded by exceptional vineyards. Its location brings mountain and sea together in a unique way, creating a distinctive microclimate that gives the region’s grapes their exceptional quality.

MEGA SPILEO ESTATE

The legacy of Mega Spileo

The history of the monastic vineyard at Mega Spileo dates back to 1550, when the monks used the Metochi as a winery. The precious must was transported by mule to Mega Spileo, where it was transferred into 500-litre barrels in its renowned underground cellar.

Cultivation was gradually abandoned in the late 1980s as the monks left Mega Spileo. In 1999, the vineyard was replanted under a long-term lease from the Monastery of Mega Spileo, marking the rebirth of a legendary vineyard.

Winemaking philosophy

The grapes arrive at the winery at low temperatures, allowing the company’s team of oenologists to carry out to perform pre-fermentation extraction, particularly for the white varieties. Following controlled fermentation and extended extraction, the red wines complete fermentation in stainless-steel tanks. Some of the fuller-bodied wines are then transferred to oak barrels, where they age and develop for two years.

PATRAS WINERY

Winemaking in Patras

Since 2015, a new CAVINO winery has been operating in the Patras Industrial Area, producing distinctive PDO Mavrodaphne of Patras and Muscat of Patras wines.

The vertically integrated process covers must production, fermentation and ageing, as required by strict wine legislation.

The uniqueness of Mavrodaphne

Mavrodaphne owes its reputation to its unique, complex bouquet, with notes of fig, walnut, cinnamon and dark chocolate, and to the velvety, rounded finish it develops through ageing. To develop these distinctive characteristics, CAVINO’s Mavrodaphne matures slowly in oak barrels in our cellar for more than 9 years.

SAMOS

In the heart of the winegrowing island of Samos

With its own facilities on the island, the CAVINO Group has established a production presence in the Samos PDO zone, among the historic vineyards of one of Greece’s oldest winegrowing regions.

Here, Muscat Blanc meets the island’s distinctive soil and climatic conditions, expressing the character of the Samos landscape in a unique way.

The remarkable character of Muscat of Samos

Muscat Blanc of Samos is known for its intense floral aromas, with notes of rose, jasmine, honeysuckle and honey. Through careful vinification, it can produce both dry and sweet wines of international renown.

Production

Production at CAVINO’s wineries on Samos has doubled in recent years, reaching 600,000 litres of fine white wine, from grapes sourced exclusively from the semi-mountainous and mountain vineyards of this renowned wine-growing zone.
